Pork Sirloin Roast

This is a simple dish that takes only a few ingredients and a Crock Pot!

Cooked 2 hours here...see the juice? Yummy!!
Ingredients:

Pork Sirloin Roast (AKA: Fresh Ham) of your preferred size, mine is 2.5 lbs.
1 large onion
Barbecue Dry Rub Mix (the brand preferred or make your own!)
Brown Sugar (if your dry rub doesn't have it in there)
A Crock Pot big enough to handle the roast

Directions:

Mix a handful of brown sugar (okay, no measurements here) with enough dry rub to make it spiced to your liking. Wash the roast and dry it with paper towels. Rub the roast thoroughly with the dry rub mixture and set the roast aside. Slice the onion and place it the Crock Pot to cover the bottom. Place the well rubbed roast on top. Cover the Crock Pot and set the temperature to high and walk away. In 2 hours come back and set the pot to low and cook until the pork falls apart about 6 - 8 hours total or longer. It would be hard to over cook this roast. If this is started in the morning and going off to work, start it on low, please!

When putting this into the pot, the first instinct is to add water. Resist this temptation, please. It will not need water.  The onions and the meat will give off their juices and make the best flavored Au Jus you ever tasted. Water will compromise the flavor.
