Cheater Chicken and Dumplings

I can't think of my grandmother (Mamaw as we called her) without thinking about the best Chicken and Dumplings in the world. Now, these don't come near to matching hers, but I work outside the home and so, I have to cheat, just a little. She'd be proud that I'm cooking; I know she would. I hope you enjoy making this easy dish!

Ingredients:

4 chicken breast halves
1 onion, chopped
1 can Cream of Chicken Soup
1 can Cream of Celery Soup
2 T Butter
1/2 t. Poultry Seasoning
1 T dried Parsley
1/2 t. White Pepper
1 T Chicken Base (or 1 Chicken Stock Cube)
Boiling water
2 Cans Refrigerator Biscuits (the small biscuits...if using the large ones then one can)

Place the chicken, onion, soups, butter, seasoning, parsley, pepper and chicken base into the slow cooker. Pour in just enough boiling water to cover the mixture. Cook on high for 4 hours. Then, flatten the biscuits out and slice each biscuit dough circle into whatever shapes you like (quarter the circles or strips or whatever) and add them to the slow cooker.  Continue to cook for another 2 hours. The dish is ready when the dumplings are puffed and cooked through.

This dish can be modified to meet your needs. It's a great way to use canned biscuits and really is delicious. This dish makes 6 hearty servings and costs me about $3.00 per serving. If you change the chicken from breasts to boneless/skinless chicken thighs it will be way less expensive. I'm willing to have the higher cost since I prefer the breast meat.  Enjoy!
