Chili Pie

Let me start by saying, you are the boss of your pie! I'm giving you how I do this here, but really, please put into a chili pie whatever you want to be there. I hear people calling it Frito Pie, but it's always been about the chili for me.

In most cases it will be better to make this with homemade chili, but today I'm using canned. Here is what I do:

Ingredients:

1 bag Original Frito's Corn Chips (I never use the whole bag but remember what I said...you...boss!)
2 cups Grated Sharp Cheddar Cheese (or whatever cheese you like or have on hand)
1 Onion, chopped
1, 15 oz. Can of Chili
1, 19 oz. Can of Chili (Or a larger can if you want to do that, I just happened to have this on hand)
Cooking Spray (I use Pam)

Directions (numbered directions fit the images below):

1.  Spray the baking dish with the cooking spray.
2.  Open your bag of Frito's.
3.  Put a layer of Frito's in the bottom of the baking dish.
4.  Add the 15 oz. can of chili over the corn chips.
5.  Add a layer of chopped onion.
6.  Top with a layer of cheese.
7.  Add another layer of chips, then the 19 oz. can of chili and then onions.
8.  Add a second layer of cheese.
9.  Add a final layer of chips and press them down a little with your hand.
10. Sprinkle on the final layer of onions.
11. Top with the last of the grated cheese.
12. Cover the baking dish and bake at 375 degrees for about 30 minutes until it becomes bubbly and heated all the way through. In the last 10 minutes, remove the lid so the cheese can become a bit browned. That's it! You have just made Chili Pie!!

This dish is one of those not really great for you, but really comforting kind of foods. We eat this rarely. I hope you like it and try it for yourself with your own new additions! Enjoy!!
